Cailles aux raisins & Côtes du Rhône Village Sablet

Quail and bacon, white grapes, Beaumes-de-Venise Wine, Amber Brandy from Duclaux Vineyard, butter and pasta or the accompaniment of your choice.


First of all, when you have all ingredients in your possesion, fry in a pan quails during few minutes and declazed them with our Beaumes-de-Venise wine.

Then in the same pan, put some butter and add grapes during few minutes and finish cooking by flaming the grapes with the Châteauneuf-du-Pape Brandy.

To finish, in a big pot, blend all ingredients and add a little bit of water to make a juice. Let simmer until the perfect cooking of the meat. It will be done when the sauce will be reduced.

Serve with any side dish you desire. Here we made the experience with tagliatelles paired with a glass of our Côtes du Rhône Sablet, it was excellent.
